Dragon chicken

Ingredients:

  1. Chicken Boneless – 500  gm (cut into stripes)
  2. Capsicum – 1 (cut into stripes)
  3. Onion – 1 (cut into stripes)
  4. Cashew nuts – 10
  5. Raisin – 10
  6. Tomato sauce – 2 tbsp
  7. Soya sauce – 1 tsp
  8. Shallots(small onion) – 5
  9. Dry red chili – 3 + 2
  10. Ginger – 1 inch(cut into Julienne)
  11. Garlic – 3 cloves
  12. Egg white – 1
  13. Cornflour – 1 1/2 tbsp
  14. Plain flour – 1 tbsp
  15. Black pepper – 2 tsp
  16. Salt – to taste
  17. Oil for frying
  18. Spring onions – 2 sprigs

Method:

  1. Marinate the chicken in egg white, salt, cornflour, plain flour & pepper.
  2. Fry the chicken in oil until it gets crisp.
  3. Grind shallots ,red chili, garlic(2) into a paste
  4. In another pan add oil, garlic, ginger, shallot paste and saute them until the raw smell goes away.
  5. To that, add onions and capsicum and continue for a minute.
  6. Add the chicken, tomato sauce, soya sauce, pepper powder and salt and set the flame to high.
  7. Fry the cashew nuts, raisins and red chili on another pan with a little oil and put it into the above.
  8. Once done, serve it with a gentle sprinkling of spring onions.
